I love stuffing my cupcakes for an added surprise! This strawberry chocolate ganache makes a great filling for a chocolate or vanilla cupcake. Really, its use is limitless.
Chop chocolate and transfer into a heatproof bowl.
Heat cream in a small pan until bubbles form around the edge of the pan, pour cream over the chocolate. Let sit for 1 minute then stir until combined.
Add vanilla and salt. Stir until combined.
Mix in the diced strawberries. Transfer to the refrigerator to chill about 30 minutes.
