					<description>The cutting off of the text is an issue with the three column CSS I coded up. It is fine, however, if the browser window is opened up to fit the 900 pixels the layout needs. I view the blog with the browser window open fully on my tiny laptop (13" screen)... So try maximizing the browser window. That should fix it.</description>

					<description>I made these cupcakes this weekend and I substituted the remainin milk for coconut milk. It worked pretty well and the cupcakes were a hit. The only adjustment I would do next time is add more lime juice and zest to the batter.</description>

Then, I filled them with a key lime pie filling (made with a water bath, like a custard) and topped them with a buttercream icing, made again with coconut milk plus lime zest.  The coconut was not overpowering - very smooth and understated and the key lime filling plus the zest in the frosting gave it a good creamy/tangy punch. They were a HUGE hit with my family (critical eaters, all of them) at our recent reunion.
